Cauliflower... it's what's for breakfast
Looking for a breakfast idea? How about pulling out the caulflower... yes you heard that right!! For the 21 Day Fix this would be 1 Green, 1 Yellow and 1 Purple ... although 1 head of cauliflower has about 11 grams of protein in it!! And it's paleo vegan... so nom it up!
How about doing this with cauliflower porridge? We are getting into the porridge season and this is a my favorite breakfast from a holistic program that I teach, that will keep you going for a lot of hours nutritionally. Make it orange for fun with orange cauliflower, or purple, or how about green for Green Eggs and Ham day at school or St. Patrick's day breakfast for the kids!! Vegan recipes do not have to be borning, and they can actually be pretty yummy too.
Ingredients 1 large head cauliflower {11 grams of protein in one head of cauliflower!! WOW!} 2 tbsp coconut oil 1 serving vegan chocolate Shakeology 1 ½ cups coconut milk 1 serving coconut cottage cheese Zest of a large lemon or a drop of lemon essential oil Generous pinch salt 1/2 cup mixed berries, for serving
Cut the cauliflower into florets and put them into your food processor with the ‘S’ blade, not forgetting the stalks. Pulse (not puree) about 8-10 times until the cauliflower is the same consistency as large grains of rice (you may need to do this in two batches). Transfer ½ the riced cauliflower to a large pan, add the coconut milk and coconut cottage cheese. Bring up to a simmer, cover with a lid, and cook until tender and the porridge nice and creamy. {Save the other half of the cauliflower for another meal} Stir in protein powder, add berries and enjoy You can also use cauliflower and slice it for a steak replacement, or rice it and add cilatnro and lime for a Chipotle Faux vegan substitution. This vegetable is my best friend, because it's so versitle.
